Choc-Pistachio Christmas Bites


A SPARKLE on darling Christmas

Part #3

This is the first ever recipe on SPARKLE on darling so I'm super excited to share it with you, my sparkling readers (I will finally have something in the Wholesome Eating section on the blog!).

I won't go into great detail about these like a lot of recipe articles, because if you are anything like me when you are looking for a recipe you want to get straight to the recipe.


These little bites are made from easily accessible ingredients, put together with just a bowl, spoon and your hands (no high powered food processor required) and are delicious and healthy. Simple, my favourite kind of recipe, everything I want the recipes on SPARKLE on darling to be about.

They are also dairy free, gluten free and date free. So many healthy treats I come across have dates and/or coconut in them as the main ingredients, nothing wrong with dates and coconut, but sometimes you just don't want something that sweet, but something to curve those cravings, so these are a bit of both without being overwhelming on the palette.

You will need.. mixing bowl + spoon + measuring cups + baking tray + baking paper


1 cup natural almond meal

2 tbsp cacao powder

1/2 cup natural peanut butter

2 tbsp coconut oil, melted

1 tsp honey (or sweetener of choice)

1/4 tsp vanilla essence

pistachios, crushed (to roll)


Mix together dry ingredients first, almond meal and cacao powder.

Add in wet ingredients, peanut butter, melted coconut oil, honey and vanilla essence, mix well until combined.

Spoon tbsp of mixture into your hands, roll into ball then roll in crushed pistachios.

Place on baking tray and set in freezer for 15 minutes before eating.


These will keep best in the fridge or freezer, removed just before eating.

Makes approx. 10 bites

Time approx. 15 minutes
