Festive Nut Free Granola

I am so excited about publishing this new recipe on SPARKLE on darling for you, my sparkling reader (it’s been a little too long since I’ve published a new recipe on the blog). This recipe might just be my favourite I’ve created yet, so I cannot wait to share it with you.

This granola is made from only 7 ingredients, put together with just a bowl and a spoon (no high powered food processor required), and is a delicious healthy breakfast or treat. Most of the ingredients you might already have in your pantry, and if not are reasonably affordable, especially if you have one of those bulk food stores close by (The Source Bulk Foods is where I go to get most of my pantry ingredients).

The granola is also dairy free, nut free and refined sugar free. Now, I love nuts and the nutrition they give your body, but from personal experience I’ve found that nuts first thing in the morning (and when mixed with oats at the same time) personally don’t sit well with me straight up, as if they feel harder to digest, which is why in this granola I chose to go nut free. If you feel you want nuts in your granola feel free to add some, but honestly I don’t think it needs them, it is extremely flavoursome without them (trust me when I say this as I found it super hard to photograph it as I cheekily kept on eating it).

This granola would make a great homemade Christmas gift in a cute glass jar with a ribbon or some twine around it and would also be a hit on Christmas morning as an alternative to a hot cooked breakfast.

You will need.. mixing bowl + spoon + measuring cups + baking tray + baking paper

Ingredients

1 cup rolled oats (or gluten free variety for GF granola)

1/2 cup coconut flakes

1/2 cup mixed seeds (I used a pre-made mix which I picked up from my local bulk food store which includes pepitas, sunflower seeds, flax seeds and chia seeds)

1/4 cup coconut oil, melted

1/4 cup 100% pure maple syrup (or sweetener of choice)

pinch of Himalayan pink rock salt (or white rock salt)

1/2 cup goji berries (Note: these are to be added after you bake the granola)

Method

Pre-heat oven to 180° C (356° F) and line baking tray with baking paper.

Mix together dry ingredients first, rolled oats, coconut flakes, mixed seeds and salt (except goji berries).

Add in wet ingredients, melted coconut oil and pure maple syrup, mix well until combined.

Spread mixture evenly onto lined baking tray.

Place in oven and bake for 10 minutes, then remove and stir/fold mixture on tray to ensure even baking.

Place back into oven and bake for another 15 minutes or until golden (if you can smell your beautiful granola in the next room, this usually means it’s cooked).

Remove from oven, stir through goji berries and allow to cool before eating/storing.

Accompany the granola with almond milk or a dollop of coconut yoghurt and a sprinkle of ground cinnamon.

This will keep best in a sealed glass jar and will last up to a week.

Serves approx. 10

Time approx. 30-35 minutes
